Balsamic Glazed Salmon with Roasted Vegetables

Ingredients:


4 salmon fillets (6 ounces each)

3 tablespoons balsamic vinegar

2 tablespoons honey

2 tablespoons soy sauce

2 cloves garlic, minced

1 teaspoon Dijon mustard

1/2 teaspoon dried thyme

Salt and pepper to taste

1 tablespoon olive oil

For the Roasted Vegetables:


1 large sweet potato, peeled and cubed

2 bell peppers (any color), seeded and sliced

1 zucchini, sliced

1 red onion, sliced

2 tablespoons olive oil

1 teaspoon dried rosemary

Salt and pepper to taste

Instructions:


Preheat the oven to 400°F (200°C).


  1. In a small bowl, whisk together the balsamic vinegar, honey, soy sauce, minced garlic, Dijon mustard, dried thyme, salt, and pepper. Set aside.
  2. Place the salmon fillets in a shallow dish or a zip-top bag. Pour the marinade over the salmon, making sure each fillet is coated. Allow the salmon to marinate for about 15-20 minutes while you prepare the vegetables.
  3. In a large mixing bowl, combine the cubed sweet potato, sliced bell peppers, zucchini, and red onion. Drizzle with olive oil, sprinkle with dried rosemary, salt, and pepper. Toss until all the vegetables are coated.

  5. While the vegetables are roasting, heat a large skillet over medium-high heat and add the olive oil. Once the oil is hot, carefully place the marinated salmon fillets in the skillet, skin-side down. Reserve the marinade.
  6. Cook the salmon for about 4-5 minutes on each side, or until it is cooked to your desired doneness and has a nicely browned glaze.
  7. In a small saucepan, pour the reserved marinade and bring it to a simmer over medium heat. Allow it to cook for a few minutes until it thickens slightly.
  8. Serve the balsamic glazed salmon fillets on a bed of roasted vegetables, drizzling the remaining glaze over the top.
