Lemon Herb Roasted Chicken with Roasted Vegetables

Ingredients:


  • 1 whole chicken (approximately 4-5 pounds) - $10
  • 2 lemons - $1
  • 4 cloves of garlic, minced - $0.50
  • 2 tablespoons fresh rosemary, chopped - $1
  • 2 tablespoons fresh thyme, chopped - $1
  • 4 tablespoons olive oil - $2
  • Salt and pepper to taste - $1
  • 4 medium-sized potatoes, quartered - $2
  • 4 medium-sized carrots, peeled and cut into chunks - $2
  • 1 large onion, sliced - $1
  • 1 tablespoon balsamic vinegar - $1
  • Fresh parsley, chopped (optional, for garnish) - $1

Instructions:


  1. Preheat your oven to 425°F (220°C).
  2. In a small bowl, combine the minced garlic, chopped rosemary, chopped thyme, juice of one lemon, and 3 tablespoons of olive oil. Mix well.

  8. Once the chicken is cooked and the vegetables are tender and golden brown, remove them from the oven.
  9. Let the chicken rest for about 10 minutes before carving. Serve the roasted chicken with the roasted vegetables on the side.
